Chef Jean-Marie Josselin, one of the 12 founding members of Hawaii Regional Cuisine, has returned to the island of Kauai to promote a fresh, rustic way of cooking.  Josselin has received recognition from prestigious culinary institutions for his innovative culinary style and use of fresh, organic ingredients.  The James Beard Foundation nominated him for “best Chef of the Northwest”; Bon Apetit magazine singled out his former restaurant – A Pacific Café – as “one of the best resturants in the country”; and Conde Nase Traveler chose A Pacific Café as one of its “50 Choice Restaurants Around the Country.”  His most recent venture since his return to Kauai, Restaurant 808 at Cesar’s Palace was voted among the “Top 10 Restaurants” in Las Vegas by Wine Spectator Magazine.

Together with his partner and business manager Andrew Ha and a world class team, Jean-Marie Josselin creates an array of tapas-style dishes inspired by tastes from all around the world yet prepared from local ingredients.  The end result: a dynamic and energetic restaurant atmosphere, a new and exciting culinary presence on Kauai, and unforgettable dining experiences for each and every visitor.
